Coconut Shrimp Recipe Ingredients
2 eggs
3 tbs flour
½ tsp salt
¼ tsp pepper
1 lb jumbo shrimp, peeled and deveined
1 ¼ cups unsweetened dry coconut, shredded
Vegetable oil, for frying
Coconut Shrimp Recipe Directions
Whisk eggs, flour, salt and pepper together until thick and smooth. Set aside for half an hour.
Dip each shrimp (holding it by the tail), first into the batter and then into the shredded coconut.
Be sure to coat the shrimp with coconut.
In a deep fryer or heavy pan, deep fry each coated shrimp until crisp and golden. It will only take a minute or two.
Remove each one and let drain on paper towels, until served.
